2) can we start from HCMC?
3) for group of 6 adult and 1 child 11 yrs old, what is the fare for the child? What will the sleeping arrangements be like in the hotel ?

I would like to answer your question as below:
1) Any surcharge for travel from 16 or 17th Dec 2018? Yes, it has surcharge of high season 100NZD/person
2) can we start from HCMC? Yes, you can
3) for group of 6 adult and 1 child 11 yrs old, what is the fare for the child? What will the sleeping arrangements be like in the hotel ?
We consider 11 years old child like an adult so please buy an voucher for him/her. You will have 3 rooms (2 double rooms and 1 triple room)
What about the train compartment allocation? You can have 2 cabins (1 cabin of 4 and 1 cabin of 3)
Or you can choose upgrade to flight.
