We're vegetarians and coffee lovers, so I was wondering if the "cooked breakfast" refers to the "full cooked breakfast" from the "buffet menu" of Isobel's restaurant, normally $29, and if it would be possible to substitute the meat items for an espresso based coffee.

The breakfast is indeed the full cooked breakfast offered on the restaurant menu. There are vegetarian options available for this; and the breakfast includes filter coffee, tea and juice.

If you are looking to grab additional hot drinks, they can be ordered on the day :)
